      This soft and slowly cooked beef stewed in ‘Petrus oud Bruin’ with fresh garden cress and pickled mustard seeds tastes heavenly in combination with our crispy fried frites.
    • Frites Indo Peanut Sauce
      My Indonesian peanut sauce with kaffir lime is served with a crunch of fried onions, roasted peanuts and Rempejek.

    • Zeeland Shrimp Croquette
      The Zeeland shrimp croquette is made according to Sergio Herman’s own recipe, with restaurant level taste quality. This exclusive croquette owes its exceptionally nice flavour to the shrimp from the North Sea. The Zeeland shrimp croquette is served in classic style, with fresh tartare sauce, a slice of lime and deep-fried parsley.
    • Slow Cooked Beef Croquette
      Our beef croquette is made with a salpicon of slow cooked blade bolar of Dutch cattle, in a powerful oxtail broth. This croquette is served with a combination of pepper mayonnaise and a fresh pickle-mix.
    • Premium Cheese Croquette
      The Frites Atelier cheese croquette is filled with five different cheeses, such as Gruyère, Parmigiano Reggiano and ripened Cheddar cheese. These top cheeses give them a full, creamy flavour. For the presentation, the cheese is lightly sprinkled with fresh tomato powder and served with basil mayonnaise.

      The fresh pickle sauce full of fresh vegetables.
    • Famous Classic
      Classic mayonnaise with oil, egg yolk, tierenteyn mustard and lemon.
    • Deep Truffle
      Our classic mayonnaise with shaved fresh truffle. The truffle is not necessarily from Italy, but wherever we can find the best one.
    • Lovely Andalouse
      This mayonnaise is made with tomato, bell pepper, chili and spices, which makes it slightly spicy.
    • Frenche Bearnaise
      This mayonnaise is based on the classic French sauce made of tarragon vinegar, which consists of shallots, tarragon and black peppercorns. Some extra fresh tarragon was added to this mayonnaise.
    • The Chef's Ketchup
      This fresh ketchup is made according to Sergio’s recipe and is a good vegan option in addition to our fresh homemade mayonnaises.
    • Tartare Sauce
      This is a classic sauce that you often order with some fish. Our recipe for tartare, with fresh herbs, goes very well with our frites, and also tastes great in combination with our other mayonnaises.

Topped with a pickle mix of cucumber, pickle and pearl onions.
